I was asked if I could make a Donkey Mob Statue, so I tried. This is the result at an 1 pixel : 2 blocks scale
In addition to the statue, I also created the saddle and chests at the same scale. So you can trick out your donkey in style.
The download includes schematics for the statue and assets (all with the same bounding box dimensions for easy combination), pre-combined schematics of the donkey with saddle and/or chests, and a world with all statues and assets.
Working with faces at angles was a bit challenging. And the statue is considerably browner than the mob itself because I couldn't quite translate its gray-brown texture into the block palette.
